You could try Cactus Jacks Trail Rides. We had a two hour trail ride with them in Sept 13 but it is a good hour or more drive from Disney. We only did a walking ride as DH was a first time rider and I hadn't ridden for years. We had someone on our group who wanted to go a bit faster but our guide said no as she would only increase the pace if everyone wanted to. I felt a bit bad as I was happy to wait back with DH and let them go ahead but they said no. I guess this at least shows they're responsible and look after novices. You could email them your requirements- I found them helpful and they always replied to my questions.
