We have been given an extra day for fast passes?

I have noticed today we have been able to book fast passes for next Monday which will be our 16th day we started on 5th. We've had 3 days not been to parks.

Does this mean we can have an extra day?

We did go to blizzard beach one day and the park closed due to bad weather, everyone was told they could get a return ticket, would they of added a day onto our tickets.

If you have 14 day tickets you'll be able to book fastpasses on any 14 days. There can be, for example, 25 days between your first and last fastpasses, but as long as you've only booked a total of 14 days worth of fastpasses then the system lets you do this.

Of course, your ticket will still expire 14 days after the day you first use it. So if you book fastpasses on a day that is, say, 17 days after your first day then it's a bit of a waste because you'll not get to use these fastpasses.

It's possible, although I would've thought you would have had to go to Guest Services to get the extra day and they would've explained that you'd get an extra day added to your ticket. And I would've thought this would just be an extra day at the waterparks, not an extra day at the main parks.

You can use the tickets for 15 days (with a day off inbetween so 14 entries). They expire at midnight on the 15th day so Sunday night.
