Vegetarian soup recipes

Does anyone make any nice non-meat soups?

Looking after a friend in a few days who can't eat any meat so would like to go armed with a few nice soup recipes

+Am in Greece so anything ready made supermarket stuff is out+

Hi my favourite veggie soup is butternut squash soup - with a little chilli hit that you can vary.
I chop a squash in half and remove the seeds, then roast it. You can also peel and chop it prior to roasting but it’s a lot of faff.
Sweat some onion, garlic and butter in a pan slowly. Add the flesh from the roasted squash and veg stock and blitz. You can add a little creme fraiche or cream cheese or sour cream to give it extra creaminess and chilli seeds or Siracha for heat. It’s tasty and filling!

I make the butternut squash with chilli too. We also like broccoli and Stilton. Potato and leek. Probably not very adventurous but still delicious !

For something a bit more unusual, I have also made the cheddar cheese soup that you used to get in Epcot in Canada - if you google cheese and beer soup you will find lots of recipes

I love cauliflower cheese soup but for a very easy one - tomato and red pepper made with passata, chopped tomatoes, veg stock pot, salt and pepper heated up, and then add 2 red peppers (which I chop and pop in the microwave till soft) then blitzed till almost smooth. Takes 10 mins.

Not a recipe, but take Marigold Bouillon Powder to use for any stock-based soup and everything will taste good.

My bog standard veg soup is 3 potatoes, 3 carrots, an onion, 3 leeks, a turnip, a tin of tomatoes and a litre of veg stock with some seasoning. Simmer until soft then blitz until smooth. Tastes so good!

Leek and Potato
Scotch Broth
carrot and Coriander
Veg Soup
