Aww.. Thank you all for your expert knowledge.. I've been reading, reading and doing more reading since I've joined, and have learned so much already that I didn't know before! I've decided I'm going to go DIY... I've just got to find that illusive flight first x

However this is for 2 of us and previous trips were for 3 of us. This is around £1000 less but if DH was coming, it would be around just a £200 saving but of course we are staying in a moderate instead of value with upgraded dining so much better value than the package.

It does depend what you want really and when you travel, but diy is cheaper generally it just takes more time to research and patience waiting for the right deal.
Based on my trip report for our 2010 holiday, it cost us £3700 for flights, hotel and transfers for the 3 of us (2ad,1ch) seven years ago. Then in 2012, PE flights + hotel + transfers cost £3300 for the 3 of us. So £400 less and better flights two years later.

Based on those prices, the OP's price of £3300 for next year seems pretty good to me.

I always use Kayak to find flights, but I believe Sky Scanner is just as good.

Im assuming you are stuck with school holiday dates? You could still get a bargain, though, especially if you are willing to have a stop over. Try to be as flexible as possible with your dates... flying midweek tends to be cheaper, BOOKING mid week also helps, I have found. Remember to search incognito, or to clear down your cookies every time you search.

Also, I find booking in October and January tend to be cheaper, but you never know when a good price will turn up.. so just keep looking. I imagine you would get an indirect flight for less than £500 over summer holidays.
