"Our 2nd Once in a Lifetime Trip" Is 3 weeks really enough?

How do we fit it all in? I've planned and re planned and stressed the whole family out about it. We do have a rough idea of what we will be doing but it's not set in stone. We defiantly want to visit a water park this time as we didn't get to in 2010 but it all depends on the weather we also want to visit all the parks twice. We also have to leave lots of room for some shopping and eating. As well as all the things we read about on The Dibb and think "ohh that sound fun" I just don't know how we're going to do it. But planning is all part of the holiday isn't it. I dread to think what I would be like if we were only going for 2 weeks.

So here's what we want to fit in to our 3 week vacation -

* Magic Kingdom - Main Street Electrical Parade & Wishes
* Epcot - Illuminations
* Animal Kingdom
* Hollywood Studios - Osbourne Dancing Lights & Fantasmic
* Downtown Disney
* Disney Quest
* Disney Boardwalk
* Celebration
* Blizzard Beach
* Universal
* Island of Adventure
* Citywalk
* Seaworld
* Busch Gardens
* Wet N' Wild
* Shopping Outlet
* Mall at Millenia
* Go Karting
* Shooting Range
* Basketball Game
* Outdoor Cinema
* Publix
* Walmart
* Miami
* Mount Dora

Although we will be eating in a lot we have found a few places we would like to try, can't go to America with out visiting an all you can eat breakfast buffet. Where will we fit these in -

* I.H.O.P
* Golden Coral
* Longhorns
* T.G.I.Fridays
* Bennys's on the Beach
* Flannigans
* Amani
* Julie's Waterfront Restaurant
