ADR and baby?
When making my reservation do I include the 1 year old in the numbers? They obviously don't have the DDP?

Yes. All ADR's booking must include all people, young and old!
When you get to the podium to check in you'll be asked a series of questions such as amount of adult, children and infants. Whether you're on the DDP or need a high chair etc. It's at this stage the varying elements of your party are broken down for them but at booking, all physical people just be added.
