Fillet Steak Tournedos Rossini with Madeira sauce.

A pain to make, but delicious to eat, generally with thin(ish) sliced potatoes , roasted in Olive Oil. A really good, dinner party special if you have a simple, preprepared starter and dessert on either side.

There is a good BBC recipe for this, although I add mushrooms to the Madeira Sauce..

I cheat on the Foie Gras, using Chicken liver pate and skip the Truffles, using wild mushrooms. It still comes out great.

I don’t Cheat on the Fillet Steak or the Madeira.

I have Champagne Tastes and Beer Money!

Where do you find your foie gras?

As above, I use Chicken Liver Pate. Even if available, I would have ethical concerns re the Force Feeding for Foie Gras.
