If you are doing a stir fry style you may well be over cooking it, I would use rump steak, cut into quite thick strips, and would still only be in about 2 mins

You can't do this with a fore rib roast, not unless you spend about £150 on a joint to cut it that way. What you say is true though. However luckily the fore rib just melts apart.
