I have a huge slow cooker so I always cook in bulk. Slow cooked minced beef/braising steak. bag it up and you can always use frozen mash if you need to. I've never had much success with home made mash that's been frozen. Always ends up runny and not very tasty for me.
Also freeze sausage casserole.
I also do chicken breasts in the slow cooker. I mix some BBQ sauce, ketchup and brown sugar then slow cook for 3 - 4 hours. Lovely. Eat some, freeze some. Do something similar with a joint of beef, pour over half a can of full sugar coke and a sprinkle of brown sugar and slow cook all day. You can keep some frozen mash and some packets of microwave rice if you really want easy sides with it.

If you google "freezer dump bags" there are loads of ideas that look good. I found a slow cooker to be really useful too.

I've had 2 kids but never batch cooked for any - I just made sure the Freezer was full of chicken, joints of meat, and some easy cook meals/pizza. Took out chicken or meat night before to defrost and bunged in the slow cooker next morning and dinner sorted for possibly 3 days, 1st day warm, second day with baked potatoe, 3rd day cheats sweet and sour or similar (jar) and microwave rice.
Also made sure was stocked up on basic essentials eg toilet rolls, kitchen roll, soap powder, tins of soup, beans etc although nowadays I suppose you can easily do online shop to be delivered off-peak from Asda for only £1.
