I had some apple and rhubarb left over which I didn't have room to freeze, I basically stewed it down, then had it with natural yoghurt and granola for breakfast every day until it was gone...

of course, you might struggle if you have tonnes of the stuff!

I had forgotten about the rhubarb - I also cook it down to puree and pack it into zippy containers which takes up a lot less room in the freezer than storing the rhubarb just chopped & frozen. I thn just defrost it and eat it over several days.

Oh I LOVE our rhubarb, as soon as that is picked it is eaten with some nice hot custard!

That's what I do with my apples when I have room. Stew all the fruit down then using a mug pop a plastic bag in it fill a mug size of apple zip or tie depending on bag then freeze them... it's great on Christmas Day to instantly have a big bowl of apple sauce for the dinner, 1 job less on the day.

I have made up a recipe and as it tasted really good (even if I do say so myself) I thought I would share it. Measurements are rough guides as I threw a few extra sultanas in depending how mix looked and over did apple sauce so I could use more up! If you have a go please let me know what you think...

Lisa's Apple and Sultana cake...

110g Butter (I use Norpack)
200g Soft Bŕown Sugar (i use whatever i have in cupboard)
250g Chilled Apple Sauce (my homemade)
1 teaspoon Bicarb
1 + 1/4 teaspoon cinnamon
120g Sultanas (I often put more in depending how mix looks)

1. Cream butter+sugar with electric hand mixer.

2. Add apple sauce and beat again with mixer (this helps any stringy bits of apples out as they catch in the whisk heads).

3. Stir in flour,Bicarb,spices and Sultanas.

4. Pour in to a greased and floured sprinkled square tin (or any tin).

5. Bake in oven at 180 degrees for around 30/40 mins or until cooked when tested..

Then eat and enjoy...
