I would go with Delia Smith. Covers everything.

Could be worth investing in a slow cooker for him. Can make very tasty dinners such as pulled pork/chicken, chilli with very little effort/skill required

Some things will be too simple, but there's a lot of good stuff in there, too, . (I had a quick look at the index.) ETA: Also, it's spiral-bound!

Disclaimer : I have the Sam Stern books, but not this one; I just like the look of it, so thought I'd mention it.
I was going to suggest a version of this. I bought it for my girls when they were fairly young but I still use it as one of my basic cook books. If he wouldn't be put out that it's aimed at children, it's a great starter cook book.

as a dvd box set of "good eats" isnt available (hopefully one day they'll just release the full set), i'd go with the books from the series. they go into detail about *why* things should be cooked a certain way (theres a fair bit of science behind it, but in an easy to follow way, rather than going the heston blumenthal route!)

Yep! Delia.

She shows you how to boil the perfect egg. Sounds crass - not at all. Her approach is that once you can handle something to perfection then you can add to your skills as you go along.

I would also recommend writing your own recipes into a nice book for him! My eldest DD did that herself before she left home. She got a nice book and decided what family recipes she liked and asked me for the recipe. That way you know there will be things that he likes to eat and that's a great place to start learning to cook.

Delilah is great for a beginner. If you follow her recipes to the letter you will make what you set out to do.
