What I always do is look on the dibbs busy day guide and see which parks are best to visit on which days, once you’ve figured that out you can look at fastpasses for each park.
I always try and do 2 days at least at animal kingdom as it’s my fave as well as Epcot and magic kingdom then a couple of evenings or afternoons at Hollywood studios
Animal kingdom - I would fastpass the pandora rides and then the safaris and I always do the Rapids or Everest!
Magic kingdom we always fastpass space mountain, splash mountain big thunder mountain and seven dwarfs mine train. Pirates of the carabiean can sometimes get a long wait time, also the smaller kids rides like Winnie the Pooh and Peter Pan get long wait times and are nice rides however if you wait until later in the evening they tend to go down!
Epcot soaring test track frozen are what we usually fastpass ok different days as they are in the same tier, the others don’t really need fastpassing in my opinion
He we normally fastpass toy story mania star tours and then we aren’t really Interested in much else however if you like big rides tower of terror and rock and roller coaster you’ll want to look into.
Are you going to universal no fastpasses there but all the rides are very good there!

You will love discovery cove! Amazing place it’s beautiful
