Great timing, I was just trying to think of something to do with very similar ingredients. Traybake it is. Thanks all x

That looks nice! Glad it was tasty! I do like a tray bake - a bit of effort putting it together, then sit back and wait...
must do some traybaked veg with our tea tonight! Having homemade fish fingers and actifry chips, so will do some red onion/peppers/courgettes and teeny plum shaped tomatoes |

Really enjoyed ours, just need to plan ahead a bit to get more variety of colour. Potatoes, chicken, ordinary onion, yellow pepper - all a bit dull. The courgette and mushrooms seemed to disappear, oregano and lemon juice made it tasty though. Would definitely do it again

We had chicken and chorizo traybake tonight. It’s a staple in our house and so tasty.
Chicken (chopped) Chorizo (sliced) Peppers, onion and tomatoes cut into chunks Garlic, chilli and salt/black pepper Drizzle over olive oil Chuck in the oven at 180 fan for us for 30 minutes - a bit longer for us as we both prefer everything slightly charred. Serve with crusty bread. |
