I am not so keen on sauces. I use panko breadcrumbs for a crispy fish, cooked in my air frier with home made chips sprayed with fry.ight and served with mushy peas.

We like oven baked salmon with some teriyaki suave and grated fresh ginger. Put it all in a foil parcel and bake for 18-20 minutes

A Mediterranean type sauce fresh tomatoes peppers onion courgettes basil and garlic put on top of fish and either wrap in tin foil and bake or baking paper and microwave serve with a couple of small new potatoes
If the rest in here are having battered fish I have Aldi lightly dusted fish usually the lemon pepper one

I made fish tacos a few weeks ago. I used haddock. They were delicious and I thought fairly low calorie. You could substitute the sour cream for something else or use less. I didn’t put oil on the fish, I forgot and it’s then baked. They were so tasty. Here’s the recipe I used.

Not a sauce as such but I place slices of lemon on a skinless, boneless cod fillet, wrap in prosciutto/Parma ham then bake in the oven. The lemon just melts and caramelises and the prosciutto goes really salty and crispy. It’s delicious!

You could try a dry seasoning ?
I like blackened Cajun seasoning or Slap Ya mama which you can get on eBay/ amazon I think although I buy it when I’m in the states .

I wouldn’t have a sauce if I was dieting, maybe just a squeeze of fresh lemon or lime.
Fish really doesn’t need to have a sauce.
