We have a bistro set at the far end of our kitchen I can't imagine eating a proper meal off it.

I wouldn’t build a conservatory . Unless she’s planning on guests every weekend , the odd hotel Bill would be a lot cheaper.
Does she want a table and a separate dining room ?

I also think a small table in the living room and change the sofa for a smaller one is the way to go. I'd keep the second bedroom as a bedroom if you possibly can. Without being too doom and gloom, having a second bedroom can make the difference for an elderly person staying out of hospital, or getting home earlier if they need admitted because there is a ready space for a family member or carer to stay over if need be.

My mum has her dining table in the lounge as there is no room in the kitchen
Her table is next to the window and on the opposite side is her sofa and chair.
It works well

If you measure what space you do have in the lounge places like Wayfair you can put input the measurements. Any spare chairs could go into the spare room and be brought out for guests ..
