We leave a few dollars at Wolfgang Pucks Express as they bring the food to your table but otherwise don't tip.

You don't tip! These are like fast food places like mcDonalds would you tip there?
Plus they will add sales tax!

Oh yes, I do leave a few dollars there as we've had some really lovely servers. That's the only QS place though

Not sure what you mean by 'plus they will add sales tax!'. Sales tax is part of the bill anyway and nothing to do with if/how much you tip.

Same here - I had to borrow a few dollar from the children

I worked in a QS restaurant in Disney and we weren't allowed to accept tips. Every now and again I would have some insist they wanted to give me $5 or so, but if I'd have accepted it then I would have been in trouble with my manager. Instead, since it was Animal Kingdom, I asked them to donate the amount to the Wildlife Fund instead. So maybe that could be a good alternative if you have great service in a QS restaurant other than Wolfgang Pucks.
