They sell the milk choc peppermint bark closer to Christmas usually, but they run out of stock around Easter. (The dark choc one will be from last Christmas' seasonal stock)

I’d stocked up when in NYC last December and also in Costco just in case I ran out lasted until April, they probably went quicker due to lockdown!
Hoping Costco restock them this year, if that falls I’ll just make my DIY bark

Same here, we stocked up when in NY in Dec, didn't last long same as coffee m&ms 😥

Here is mine
3tablespoons cinnamon
2 teaspoons ground ginger
2teaspoons ground nutmeg
1 teaspoon ground all spice
1 teaspoon ground cloves
Stir till combined
Mincemeat pin wheels
Either roll out a puff pastry block or use£a sheet
Spread the mince meat over the pastry going to the edges but don’t make it too thick leaving a 1 cm of uncovered pastry at one end
Start at the longest end and roll into in to a sausage shape towards the uncovered edge seal with beaten egg
Brush with beaten egg and cut in to 2 cm slices bake in a hot oven for around 10 mins depending on your oven I put them on a baking sheet lined with parchment
Remove and dust lightly with sugar of your choice I sometimes use the pumpkin spice mixed with a little caster sugar
They are best eaten hot but fine cold they do not reheat well
