We did a week at Universal last year and that was plenty of time to see the two parks and Volcano Bay. We stayed at Endless Summer resort and loved it. 7 days without express passes but with loads of time to mooch about the parks and take it all in. We were there in late August so queues were low and we had loads of rides on all our fav's. You could easily stay onsite for 14 days but I would probably suggest you stay elsewhere for the second week. This will save you a lot and give you the option of self catering in a villa or perhaps a hotel on the strip.
