Disney are increasing capacity and current crowd levels aren't a good indicator of Christmas crowd levels anyway. It's a totally different ball game. And it's over a year away so I'll be surprised if it's not close to normal Christmas levels.

No not mad. I’d think carefully about where you stay onsite though.

Here’s my trip report from a few years ago 24/12 to 4/1 all onsite at Disney. You might find it useful.

Not your not mad you will have a fabulous time we went last Christmas and were hoping to go this.. Is it colder but the kids still swam in the day and we had a great day at Discovery Cove, the decorations are fab and all the special Christmas extras are lovely x

If you are doing Vegas, why not go to Aneheim ? You've paid to go all that way , i would be tempted to make the most of it! Plus might be warmer!
I know you said you've been to NYC but as most people expect Florida to be warm you don't tend to pack the same. Seriously pack warm coats, when we went we had to buy gloves for the kids one evening in Disney! There was frost on the cars some mornings!

It usually starts early November. Just after the Halloween ends.

I havent ever been over actual Christmas, but always go late nov/early dec and I cant imagine going at any other time of year. Its magical!
As far as the pandemic goes, I think you just have to think worse case scenario and if you're happy with that then go ahead! For me, I cant bring myself to go (not that we had plans to just yet anyway!) however people I know booked during the pandemic to go in November. Do what you feel happy with!
