Hi first check were you want to fly to, possibly consider a circular route and try to make all stops at least 2 nights.
example into LA.
Drive to san diego 4 n
2 n palm springs
? 3 n vegas
1 n death valley
3/4 n Yosemite
4 n san fran
3 n Monterey
2 n santa Barbara or similar on coast
then LA for your Disney fix etc

To Cover all of those places even at a full on place you will need the best part of 3 weeks.

That would be giving you the minimum time really if you started North and worked south:

San Fran 3 nights
Yosemite 3 nights
Pacific Coast Highway (Monterrey etc) 3 nights
LA 3 nights
Anaheim 4 nights
Palm Springs 2 nights
San Diego 4 nights

California is huge and you will spend many hours driving between some of these locations.

I would start with a list of what you want to see in each location and how long that means you need there and what the travel between each location would be. This will show you whether you have enough time and whether it will give you the pace of holiday you want. You can then start to prioritise.

Im just going to mention that with a family of eight, accommodation costs will be seriously higher than smaller group. Some places in California are expensive already (San Francisco springs to mind) so that would be worth thinking about when planning.
