With one minor caveat. We've never flown indirectly via an EU country. If you do are you just in transit airside or do you go through passport control? There might be a case there that the EU transit country might demand 6 month's grace.
In general I would agree about the 6 month club, since membership is not tied to EU membership (in fact there are still some EU countries that need a visa, a source of great friction between the EU and the USA). Of course, longer term it’s possible, and could be used as a bargaining chip by the US in trade negotiations.

Regarding connections via EU airports, it would basically depend on airport layout. In most major EU airports there are sterile transit areas for non-Schengen to non-Schengen connections, but I can’t say that I know all of them. It is possible that even in those, transit visas could be required (as the UK requires today for certain nationalities), but I would view that as pretty unlikely.

Also the rest of the family have no plans to return to the USA after our Disney trip but I’m planning a girls trip to NY Dec 2020, will our group Esta cover me for this also?
If the Dec 2020 NY trip you refer to is with girlfriends vs daughters your pp need only cover your trip date and you're good to go. ESTAs are individual, 'group' allows one payment for numerous applications.

Is that not the standard first night meal for everyone?

It is for us at our age these days. Given up on the likes of Longhorn, Carrabba's, Bonefish Grill etc until we're a couple of days in.

Easy to catch the ones you are talking about as they are missing a “g” so can’t run as quick.
The ones you need to watch out for are HaGGis.
Car was iced over Friday morning

When I booked out flights this week, the BA guy did say we need 6 months on our passports after our return date. I thought this rule didn't apply anymore...
