Thanks for the opinions people. I probably didn't make it all that clear. Basically I'm wondering what happens for FP+ bookings beyond the first 7 days on site (which I should be able to book 60 days advance). If I waited for <30 days before the offsite part, I'm now guessing I wouldn't be able to book anything if I already had 7 days booked at <60 - but as someone said above if I'd booked only a few days during onsite and wanted to use the rest for offsite, i'm not sure how it works.

7 days on-site with 7 days of booked FP+ no more room for more. Unless the on-site part doesn't count towards the quota. But I read it as it does.
They don't have to visit the parks on every day of their 7 days onsite. They can just book 4 days of FPs during the time they are onsite and then 3 days of FPs during the time afterwards when they are offsite - so still 7 days in total. They don't have to book FP+s on all 7 days that they are onsite.

In my interpretation, if they are 50 days before their check-in date, they can book fastpasses for 4 days whilst onsite and the 3 days after they check out and are offsite. However, I don't know for sure whether this is possible.

If they were standard tickets it would be a rolling 60 days after the stay. But I have no experience of AP's in that situation. It could be the same but who knows?

Yeah, that's what the OP is asking.

I have no experience of APs either. Hopefully, someone else can advise.

Hi OP,

Great question, I have just booked my 1st on site stay for 3 days at the start of my holiday - So I'd be keen to know the answer too...

I asked this question on the 'Disney Annual Passholder facebook page'

I have a 3 day on site hotel booking, but am in the area for another 3 days.
Can I book 7 days of fastpasses at the 60 day window?

Answer
You can book for the days you are on site at 60 days. The other days fastpasses will need to be booked at the 30 day window.

If you booked the on site stay at the end of the vacation, you'd be able to book the fastpasses which come prior to the stay.

OP,
Hopefully that answers your question.

Edit, I have further info...

A. The 60-day FP booking window will open at 60 days before the check-in date of the onsite stay and will extend until the checkout date of the onsite stay. Additionally, the booking window will roll forward (a rolling 60) each day beyond the onsite checkout date

Q. So you think at 56 days from check in I might be able to book the fast pass for the 1st day off site?

A. yes. I know you can. Im looking at just such a window now

So, two conflicting answers.

The last answer was what I thought would be the case. tBut the first answer contradicts this.

Considering APHs aren't quite sure what the answer is, it's very much a valid question to ask.
