One of the nice things about June is with the longer hours you can go early then pop back for a midday break, nap, swim and return late afternoon and stay til late. With such a little one that often works well.
My quotes were with TUI but Thomas Cook may have similar from Gatwick too |

I'd just seen the Epcot times. So we'd definitely have to have a pass for Epcot.
Have to sign off for tonight now. But thanks again. Got hubby working furiously lol! |

OP, 5 days effectively means only 3 days as a holiday. The first day is wiped out with travelling. The last day, you might get a couple of hrs in a park after Breakfast, but then it's another travel day / overnight flight.
A large part of the cost of a Florida holiday is flights and tickets and most tickets are 14 day affairs. However, saying that I've done 7 days and it can be done. Cheaper Options for tickets would be 1, 2 or 3 day passes for Disney and Universal. One thing to look for are cheap deals a few weeks before you wanted to go from Thomas Cook and TUI. A case of holding your nerve for a late deal. If you go that route, consider lining up ESTA applications well in advance.

Even with just one week off work could you not do Saturday (AM flight arrive mid afternoon) to Saturday (evening flight out at tea time) then at least you get about 6 days there?

The travel time and the cost of flights and park tickets make a one week trip relatively much more expensive than a 2 week trip.
Your flight price will be the same regardless as will your ticket price (7 and 14 day tickets are a very similiar price). Saying that if you can do a full week I’d consider it but I wouldn’t go for less than a Week. It’s just too far and expensive for a short break. |
