I would scrap the Cabana Bay hotel
i would too, don't really see the point in that choice when you've got Hard Rock immediately after it.

Any thoughts on where I should stay rather than Cabana Bay for those 2 nights?

I'm solely coming from doing 2 hotels in Orlando rather than 3, so I'd either add on 2 nights at AKL, or 2 nights at Hard Rock.

But if you're happy moving about to 3 different hotels in Orlando instead of 2, just stick with what you have (Cabana Bay is a fabulous hotel).

Hard Rock is nearly £500 a night that week so had only done 2 nights there purely on cost. Maybe 4 nights at RPR (if it's cheaper?) might be the better solution?

We are doing three weeks and have more hotel changes.
Packing cubes will make it much more manageable.

We always do split stays. This year we have 4 including a cruise. We are 3 adults and infant twins. We have the packing down to about 15 minutes each hotel but then we travel light.

Just don't unpack for the last week and put everything you don't need in a separate case once you leave AK. I also suggest traveling light so you don't have so much stuff to sort through. It looks perfectly doable to me and at the price of HRH, I would be including 2 nights at Cabana Bay as well.

No problem at all, Cabana is perfect for Volcano Bay and the onto Hard Rock for luxury and to enjoy Universals Theme parks 👍
