So frustrating

It’s so frustrating that Disney don’t do a 7 day pass at half the price of a 14 day. We only want disney for a week.

They’re never going to do it half the price. The concept for all these tickets is the more days you are in the park (spending money) the cheaper it is per day.
Have you tried Magic Your Way tickets?

Have a look on undercover tourist.com.

But you might find once you get above maybe 5 days, the price is similar to the ultimates.

Disney do already sell 7 day tickets. So what you're actually asking for is for Disney to sell their tickets cheaper. Although we'd all like that, it isn't going to happen. Plus if Disney did make them cheaper then it would make the parks even busier than they already are.

You can also look on OrlandoAttractions.com here:

The Magic Your Way tickets are now date specific. So you have to choose the start date when you'll visit. The price depends on the date chosen; peak times are more expensive than off-peak times.

A 7-day Base ticket (no hopping, no waterparks) during peak time is around £330. So this is cheaper than a UK 7-day ticket. But sadly still not half the price of a 14-day ticket.

Look at it the other way, the 14 or 21 day is an absolute bargain
