Just got some beef short rib on, smoking at 220 ish f.

Intend to wrap in butchers paper at 170 ish and then push on to 205 ish.

Also doing some vortex wings (and a few supermarket sausages).

Having a freezer clear out so have 4 racks of Ribs on and 6 Beef Short ribs and then will stick a Kellbab on the Joetisserie later as is always a crowd pleaser.
A few Sausages too grumpy grand dad who thinks a Cumberland sausage is exotic .

I need to get the rotisserie , problem is it’s £300 for mine and not sure I’d get the value, the Kellybab I’d like to do. Post some pics will you?

Omg this thread is amazing. Anyone got any links to idiot proof, beginner bbq recipes? We have a charbroil gas bbq (I know many say gas is not a real bbq ha ha) but have no idea what we’re doing with it. We just whack up the heat and wing it. Would love to use it more but not very confident and have no idea how long things are meant to take/what temp to cook at etc!

Greek Chicken flatbreads tonight, these are hit every time, butterfly the breasts and score, marinade in olive oil, lemon juice, dill salt and pepper.
Slam them onto a red hot bbq and leave for appox 3mins, turn so the charlines run accross leave for another 3mins and flip over and do the same again on the other side , thermo pen them to 165 and ant spare marinade coat while turning.
