I use a spreadsheet(colour coded), with a plastic folder for all the various associated, and probably unnecessary, scraps of paper - whilst I am planning.
Then I input it all into the Dibb vacation planner for whilst we are there... I take an A4 daily printout, that I scribble my holiday/trippie notes on, and also print out tiny copies for quick reference (keeping a day at a time with us in parks).
