Freezing veg question?
Hi all,
We were meant to go to my mums for toast lunch yesterday and had to cancel, she’s now asking me if she can freeze the fresh sprouts and prepared runner beans - is that something she can just put in the freezer without cooking first? Sorry daft question I expect, but whilst I sometimes buy frozen veg, I’ve never needed to freeze fresh veg! |

Yes, it will be fine. I often chop and freeze fresh veg if I've bought too much, to avoid waste, and its spot on.

I thought you had to blanch it first - drop into boiling water for two minutes.
Not sure tbh might be another daft thing my lovely mum has taught me 😃 |

Sprouts I'd blanch runner beans no but the sprouts I'd defrost and probably shred and pan fry with shallots and bacon rather than boil
Beans I'd be using them in a stew soup stir fry etc straight from the freezer I often freeze cleaned sliced leeks ,peppers ,onions from the allotment Again for soups stews etc |

It is OK to freeze and keep unblanched veg for up to four weeks. Anything over that needs blanching. At least that is what I read. I am not a fan of bought frozen carrots so we prepare and slice fresh carrots and freeze them. So we just do a couple of pounds in weight at a time.

Jan I do blanch leek onions peppers etc at the end of the season
Tomatoes etc goes into chutney pickle etc if keeping longer than a month -6 weeks and oh how the house stinks but the chutney and pickles on Boxing Day delicious |
