May / June is my favourite time to go - you have longer hours, still not crazy busy (but its not quiet, just so be clear), weather is glorious, lovely hot evenings and sunny days. It is pretty warm, last year we were there a little later into June and we had lows overnight of 20, highs up to 34 in the day. Definitely need lots of a/c breaks!

Flower and Garden Festival is still going on at Epcot too - its the prettiest time of the year.

We usually go October too but like you, changed to May because of the dining plan restrictions. We are going 26th May for 2 weeks and also not sure what to expect in terms of crowds. We went last two weeks of May last year, but not into June when I understand the US kids will be on summer break.
