Ditto Country Bear Jamboree and Hall of Presidents -plus the speedway at MK , I would also give the American Adventure at Epcot a miss. The DW hates the Enchanted Tikki Room.

Agree about Tomorrowland speedway. Slow and boring. Buzz lightyear is like a more child friendly Men in Black. Pirates of the Caribbean is only really worth it as a walk on. Youngest son has never forgiven me for taking him on the Haunted Mansion, never been so bored apparently.

Nothing. I would recommend experiencing all the attractions at least once, if you can. One person's worst ride can be another person's favourite ride, so only you can tell which attractions you like.

However, there are some attractions I would put at the bottom of the list (based on my own subjective opinion). Prioritise other attractions over these:

Astro Orbiter
Barnstormer
Country Bear Jamboree
Enchanted Tiki Room
Hall of Presidents
Jungle Cruise
Peter Pan's Flight (unless you can get a FP for it)
Indiana Jones Epic Stunt Spectacular
TriceraTop Spin
Most of the films in World Showcase (China, Canada, France, etc)
American Adventure

Nimbus is right as always, in fairness there are a lot of rides at Disney that I think are meh but saying that if I could get on them all quickly and easily then I would ride them.
So to put a different slant on it I wouldn't bother with these rides if the queue was massive or didn't have a fast pass.
Tomorrow Land Speedway
It's a Small World
Peter Pan
Frozen
Navi River ride but this you can usually get a FP.
SDMT (ride is too short and not worth the effort without FP)

I don't know about not doing but one that has never appealled, and to this day we have never been on it ,is Tomorrowland Speedway (known by other names in other parks).
