Use gluten free biscuits for a cheesecake base, gluten free brownies with ice-cream,meringue, Nigella chocolate cloud cake( recipe online).
I am gluten free & love meringue /pavlova/eton mess.

Nigella does an amazing gluten free (so no flour) chocolate brownie. It really is delicious served with vanilla ice cream and fresh raspberries and is very quick and easy to make.

What about creme brûlée (egg yolks, cream, vanilla & sugar) and merangues (egg whites & sugar) with fruit & cream.

Two desserts using very few ingredients 👍🏻
